Both root, flowers, and leaves can be used. The root contains a lot of inulin, which is a special dietary fibre, as well as many terpene lactones and both vitamins and minerals.
Especially suited for children.
Dried and toasted was earlier used as a main ingredient in coffee substitutes. Today, it is often used in chickory coffee and other kinds of coffee substitutes made from grains and herbs.
Dosage
2-4 cups a day for shorter periods of time.
The root can be eaten as a vegetable; the taste is similar to that of parsnip.
